We made the best Waffles this past Saturday morning that are perfect for Vegans/Nutritarians and anyone looking for a healthy option! The waffle is made with Rolled oats, flax meal, Bananas, orange zest, almond milk, cinnamon and walnuts! We added Beet Box Produce blueberries and some local maple syrup from Logan County we purchased at Rian’s Fatted Calf. We double the recipe and freeze some for later with heating up in microwave. Here is the full recipe we were asked for:
Prep Time: 10 minutes – Cook Time: 5 Minutes – Makes 4 square waffles
- 2 1/2 cups old fashioned rolled oats
- 3/4 cup walnuts
- 1/4 cup flaxseed meal
- Zest of 1/2 orange
- 1/2 to 3/4 teaspoon ground cinnamon
- 1 medium banana
- 1 to 1 1/2 cups almond milk
Preheat a waffle iron. In a food processor or high-speed blender, combine the oats, walnuts, flax-seed meal, orange zest, cinnamon, banana and almond milk until a smooth pancake-like batter forms. The batter will be quite thick. If you prefer a thinner batter, add more almond milk.
Portion the batter thickly onto a preheated waffle iron and spread it out to all corners. Close the lid, and cook the waffle according to the manufacturer’s directions for your waffle iron. When done, remove the waffle from the iron. Top them with the fruit of your choice (we used both blueberries and banana) and grab some of the local syrup we scooped up from Rian’s fatted calf.
